A look towards the future: environment and health

The presentation begins by considering environment and health in the context of factors that influence consumers’ daily decisions about what to eat and drink. One factor is generally high in importance, the other is not. The expectation is that it will gain in importance, and the talk discusses vertical farming as a path to less environmental impact of food production. Consumes’ adoption of flexitarian and plant-based diets can also positively contribute to environmental sustainability. Changes in this regard are discussed, particularly from the perspective of Chinese consumers. The second half of the talk focuses on health, and also pays attention to Chinese consumers. Selected factors in understanding health and wellbeing are also discussed. Topics of future interest are considered throughout, and multiple side steps are made to make room for important considerations of methodology or common research practices. The presenter is an editor of Food Quality and Preference and concludes the talk with a brief look toward possible future changes in science publication.
