9.30-10.10 – A look towards the future: environment and health

The presentation begins by considering the environment and health in the context of factors that influence consumers’ daily decisions about what to eat and drink. One factor (health) is generally high in importance, while the other (environment) is not. This has remained the case through the covid pandemic as illustrated using data from a consumer study in the USA. The expectation is that environmental concern will gain in importance, and the talk considers vertical farming as a path to less environmental impact of food production. Consumes’ adoption of flexitarian and plant-based diets can also positively contribute to environmental sustainability, but barriers to uptake are complex. This is illustrated through results from a recent consumer study where plant-based beverages and their regular counterparts are compared. The talk concludes with some insights gained during consumer research in China, where life and peoples’ priorities can be very different to the Western world.
